Herbs and edible flowers are among the most popular products in Austria, and the vendors are trying to maximize the range, offering customers products from abroad and local production.
As for herbs, wholesale dealer Gottfried Kramer explains that the total turnover from 500 to 600 kg per month, herbs are considered one of the most important pillars of wholesale trade. "If there are regional products, we try to offer them in the first place, but mostly imported from Israel, Spain, Kenya and, to a lesser extent, from Germany," he says.
To trade profitable herbs as they are sold in a very small 50-gram package, and quickly come to an end, for example, restaurateurs who are among the main consumers.
In addition to a varied assortment of herbs buyers are offered a selection of seasonal edible flowers.
"Flowers are especially popular in high-end gastronomy. Currently, they offer regional suppliers," says Kramer.
One of the most popular among edible flowers are nasturtiums, violets and chamomile. These flowers really do not have a clear peak season, but customers tend to buy more of them in the spring. "Otherwise, the total sales during the year are always relatively constant, as the price," said Kramer.
Most of the flowers grown in the regional greenhouse in contrast to the more cold-hardy herbs such as mint, which in Austria is cultivated in the open ground during the summer.
