С 2011 года потребление грибов в России выросло более чем вдвое: с 49 тыс. тонн до 100 тыс. тонн. Спрос подкреплён мощным увеличением отечественного предложения. Так, за тот же период производство выросло в 20,5 раза, с 4,2 тыс. тонн до более чем 86 тыс. тонн в 2020 году, и в 26,4 раза, до 111 тыс. тонн в 2021 году.
