Moscow and the Moscow region are the largest regions of Russia for the consumption of cultivated mushrooms both fresh and processed form. The company "Technology of Growth" conducted surveys of the target audience of buyers and consumers of fresh cultivated mushrooms in the Moscow region. The main objective of the interviews was the clarification of the peculiarities of the consumer behavior in the selection and purchase of fresh mushrooms in the consumer preferences in terms of kinds of mushroom products, identification of criteria of trust and the factors contributing to the increase in the volume and frequency of purchases. In the same period was conducted trade audit leading grocery chains in Moscow and region in the segment of mushrooms and mushroom products. The objective of the audit was to analyze shopping offers fresh and processed mushrooms in the grocery retail capital of the region, in terms of assortment, quality, price, packaging, origin of fungi and the allocation of major commodity producers of mushrooms and oyster mushrooms, which supplies its products to Moscow and the region, and their share in retail offer. Report on the results of the field studies helps to get a General idea about the current balance of supply and demand for fresh and processed mushrooms, oyster mushroom, shiitake other mushrooms in Moscow and the Moscow region, and the potential of the mushroom market, in terms of commodity production of cultivated mushrooms for implementation in the Metropolitan area.
