Experts Krasnoyarsk center for standardization and Metrology (CSM) recognized adulteration 12 out of 13 samples of sausage "Doctor". They were all produced by enterprises of the Novosibirsk, Tomsk, Omsk oblasts, Krasnoyarsk territory, as well as in the republics of Buryatia and Khakassia, said on Thursday TASS in the press service of the CSM.

According to the Deputy Chairman of the tasting Committee of the center Hopes Baroncini, studies were conducted on histological and physico-chemical parameters.

"Most of the samples "Doctor" does not correspond to its name. Contained animal protein, starch, carrageenan, gum, soy isolate and soy concentrate. These substances help to retain moisture, to replace natural meat, and thus to reduce the cost of the product," she explained.

Only one of the food Krasnoyarsk region recognized experts conscientious producer of "Doctor".

The test results unscrupulous manufacturers will receive from Krasnoyarsk UCM requirements on elimination of the revealed violations of the state standard, explained in the office.

About the "Doctor" sausage

Sausage, appeared for the first time in 1936, contains only natural ingredients - meat, eggs and milk. Recipe sausage "Doctor" was created for the recovery of people with poor health, undermined during the Civil war.

"Doctor" by law can only be called boiled sausage, made in strict accordance with GOST R 52196-2011. According to him, the sausage should include beef, pork, eggs, milk, salt, sugar, spices. Allow the use of sodium nitrite (catch paint) and ascorbic acid (stabilizer color), as well as other food additives.

In the center noted that the standard does not provide for the application of dyes, fragrances, thickeners and vegetable proteins.
