The quality of the wheat disappoint

Most of the wheat grown in Russia is related to class 4 - 49,7% of the investigated grain. More of 25.7% is in grade 5.

Low quality of domestic wheat is stored and is largely due to a lag in genetic engineering and breeding, as well as pricing which does not encourage producers to grow grain more high-class. After all, the price difference between 4 and 1 class of grain does not allow to recoup the costs of modern agricultural chemistry and a new selective methods.

In the end, the quality of grain in the country has been falling for years, and a former forage (4th grade) was recognized as food.

Paradoxical seems the decision to make changes to the GOST, according to which from 1 July 2018 wheat class 5 allowed for the production of flour. Earlier this grain is used only for animal feed.

For comparison, the famous French exchange MATIF, where they sell wheat for baking high quality bread, grains with gluten below 28% (our 2nd class) does not happen.

No wonder that, arriving at the store, we often complain about the lack of flavor in the bread.
