According to the "analysis of the flour market in Russia", prepared BusinesStat in 2018, in 2017 the total amount of its sales in the country declined by 4.5% compared to 2013 and amounted to 9,36 million tons Annually, the index showed reduction, with the exception of 2016, when sales increased by 1.8% compared to 2015 In 2015, sales decreased by 1.8% compared to 2014 the Main reason for the growth of product prices. So, in 2015 the average price of flour increased by 18.3 percent to 20.7 rubles per kg (in 2014 of 17.5 rubles per kg). The higher prices was due to overly active export of cheap Russian grain abroad, which led to shortage of products on the domestic market and, consequently, higher prices for grain and products of its processing. A significant drop in legal sales in 2017 (4.1% compared to 2016), in part due to the increase in the shadow market. According to experts, a record grain production for the second consecutive year (2016-2017) led to increased underground mills that work on the "gray" schemes and competitive prices.

In 2013-2017 an average of about 91.5% of the total sales of flour were wheat and wheat-rye flour. The proportion of rye flour amounted to about 7.5% of the total. The remaining 1,0% of sales were to other types of products.

According to the forecast of BusinesStat, in 2018-2019 gg sale of flour in the country will increase by 1.1 and 0.5% respectively, which is due to the low base of comparison and the expected decrease in the price of flour due to high grain harvest in 2017 in 2020-2022 gg sale of flour in the country will be annually reduced by 0.3-0.5% per year. The main reason for the expected decline in rate will be gradual adaptation of the population to the economic situation against the background of slowing inflation and decline in real incomes. This will not only reduce consumption of bakery products, but also to the fall in the purchase of flour in retail for homemade pastries. In 2022 sale amount of 9.40 million tonnes, which is greater than the value, 2017 only 0.4%.
