A long time ago the Australian blue crayfish attracted local farmers for the special taste and tenderness of the meat.

"We wash crayfish of silt and reeds, and sort on the large and medium", — said ichthyologist, Anargul Kurchaeva.

The average cancer weighs about 50 grams, large is 120. But here they are selected not only for sale. To date, this is the first in Russia workshop on breeding tropical crustaceans.

"We have the cultivation of Australian cancer, we form a broodstock, planting material, conducting chemical analysis of water, be sure to take this into account", — says a leading specialist, ichthyologist, fisherman Dean Chokusheva.

"This year the volume of sales is small, our task is now to prepare planting material, working with broodstock, so that we have quality manufacturers, prepare the planting larva. To reach the export to other countries, need certain volumes. For these volumes we are ready to leave after a year or two", — says the Deputy Director of the enterprise for the production of tropical crustaceans Maxim N. Logachev.

Now the company contracts with the largest Astrakhan grocery stores and with retailers, cafes, bars and restaurants of the city. Leadership plans to implement 80-90 tons, as well as to expand production to construct more shops and greenhouses, as well as to create additional water reservoirs for cultivation.
